Here's a simple main dish that might make you want to find the best maple syrup. Start marinating the chicken breasts on Saturday afternoon for a quick dinner later.
Ingredients
2 tablespoons pure maple syrup
1 tablespoon reduced-sodium soy sauce
2 teaspoons lemon juice
1 clove garlic, minced
1 teaspoon minced fresh ginger
¼ teaspoon freshly ground pepper
2 boneless, skinless chicken breasts, (about 8 ounces), trimmed
Directions
In a shallow dish, blend syrup, soy sauce, lemon juice, garlic, ginger, and pepper. Add the chicken, ensuring it is thoroughly coated with the marinade. Cover this and refrigerate for 2 hours, flipping once during this period.
Preheat an indoor grill pan after applying cooking spray and set the heat to medium. Extract the chicken from the marinade (keeping the marinade aside for later) and cook until a quick-read thermometer, when inserted into the thickest section of the breast, reads 165°F. This should take about 6 to 8 minutes per side.
In the meantime, transfer the reserved marinade into a small saucepan and heat until it starts to simmer. Allow it to cook until the volume reduces by approximately half, which should take around 4 minutes. Generously glaze the chicken with this reduced sauce before serving.
