Maple-Glazed Chicken Breasts

Here's a simple main dish that might make you want to find the best maple syrup. Start marinating the chicken breasts on Saturday afternoon for a quick dinner later.




Ingredients


  • 2 tablespoons pure maple syrup

  • 1 tablespoon reduced-sodium soy sauce

  • 2 teaspoons lemon juice

  • 1 clove garlic, minced

  • 1 teaspoon minced fresh ginger

  • ¼ teaspoon freshly ground pepper

  • 2 boneless, skinless chicken breasts, (about 8 ounces), trimmed

Directions


  • In a shallow dish, blend syrup, soy sauce, lemon juice, garlic, ginger, and pepper. Add the chicken, ensuring it is thoroughly coated with the marinade. Cover this and refrigerate for 2 hours, flipping once during this period.

  • Preheat an indoor grill pan after applying cooking spray and set the heat to medium. Extract the chicken from the marinade (keeping the marinade aside for later) and cook until a quick-read thermometer, when inserted into the thickest section of the breast, reads 165°F. This should take about 6 to 8 minutes per side.

  • In the meantime, transfer the reserved marinade into a small saucepan and heat until it starts to simmer. Allow it to cook until the volume reduces by approximately half, which should take around 4 minutes. Generously glaze the chicken with this reduced sauce before serving.
